Astronaut freeze dried ice cream was created for, you guessed it, astronauts! Whilst we keep our feet firmly on the ground, we do use their technology!
We choose to freeze dry our produce on farm as it has some valuable benefits over air drying and normal freezing as a means of preservation. Freeze drying preserves all the nutrition, colour and fibre of the produce by removing nearly all of the water.
The produce is placed in a vacuum chamber and frozen to -40 °C. It is then subjected to very low pressures which gently removes the water from the fruit by a process of sublimation.
We then pack the perfectly dried fruit into special Mylar bags with a silica gel sachet and an oxygen absorber.
Kept in your pantry unopened, freeze dried fruit keeps all the goodness preserved for up to 25 years with absolutely no preservatives or additives! And yes, we have made astronaut ice cream. Keep an eye out, it may appear in our store at some time.
